A few weeks ago I saw the cutes popsicles in a magazine and thought we would give it a try. All you need is a few Dixie cups, kiwi, strawberries (I used frozen), and blueberries (also frozen) and some Popsicle sticks. We blended each of the different fruitspseparately and then layered them in the Dixie cups. Insert your stick and wait for it to freeze. Kalan had a blast making them and couldn't wait to get a taste. While they turned out very cute we would definitely make them differently next time. Kalan loves kiwi but not so much in a popsicle I'm not sure what we will substitute it with but this is defiantly a must try again.

SUPER MOM RULE #2... It is as simple as that. I want to be and I try to be; however, somehow I am always lacking ideas, time, or pure skill. I have this vision of the 1950"s mom who always cooked dinner from scratch and had it perfectly placed on the table by six o'clock every night and to top it all off she did it in a dress and heals. I want to be that mom but instead I'm the one screaming at everyone to get out of my kitchen, spilling things all over the counters and floor and barley manage to get the frozen box meal on the table before bed time.
My goal is to take a step back and get better on meal at a time. I want to plan ahead so that I don't become overwhelmed and most importantly I want to start EASY.
Tonight's Meal
Green bean and Chicken Casserole
When I first read the recipe it sounded a lot like they just took a good old fashioned green bean casserole and changed it from a side dish to the main dish which to me means one less dish to WASH! The recipe was....
1 package (6 oz) long grain and wild rice mix
4 cups cubed cooked chicken
1-3/4 cups frozen French-style green beans
1can (10 3/4 oz) condensed cream of mushroom soup
1 can condensed cream of chicken and broccoli soup
1 can mushroom stems and pieces
2/3 cup chopped onion
2/3 cup chopped green pepper
1 envelope onion soup mix
3/4 cup shredded colby cheese
2/3 cup french-fried onions.

1)cook rice according to package stir in chicken, beans, soups, mushroom, onion, green pepper, and soup mix.

2)pour into baking dish and sprinkle cheese and french-fried onions on top.

3)bake at 350 for 60-65 min

WELL.... Throughout the years I have spent most of my time struggling to keep up with the Jone's, Mrs. Jones in particular. My daughter was born three days after I turned twenty and there were so many critics out there that never thought I would be able to handle motherhood. I couldn't blame them too much, I mean I was an unmarried, college dropout with absolutely no plan for the future. No plan that is until my little girl stepped into my life. From the beginning I felt that it was my job to prove everyone wrong and to become the best mom I could be; to become supermom. But who is supermom; what does she look like; how does she raise her kids; and keep her home? How does she manage to get 40 hours of work out of a 24 hour day? Where does she get her third arm for juggling the cooking, cleaning, working, playing, and all of the 600 other things she balances on her plate?
I have watched those around me who seem to have it all figured out and wonder why can't I do it like that? Then I realized that even the best mom isn't perfect and no mom no matter how hard they try actually has super human powers. While I may not ever be the perfect mom I can't help but to strive everyday to be a better mom than I was the day before. I have conquered great feats in the last five years. I went back to school, married an amazing man, graduated with a degree in Early Childhood Education, gave birth to our second wonderful child, became a first grade teacher, and I am currently carrying around baby number three who we will welcome to our family in the end of October 2011.
I now would like to conical my journey through motherhood, to share with others the skills I have gained and and hopefully learn from a few other supermoms as well.
